No trip to the Niyama Private Islands is complete without a visit to Subsix. This exclusive restaurant is located 20 feet below the Indian Ocean and is ready to have you feeling like the Little Mermaid. The only way to get to Subsix is on the resort speedboat, which travels 500-meters to the offshore dock. Upon arrival you’ll find an extravagant staircase that descends three levels into the restaurant. Between chandeliers that resemble coral and atmospheric blue lighting, you’ll be fighting the urge to hold your breath. The structure is built right in the center of a thriving coral reef, perfect for taking in the view of swimming turtles and eels in the central clam-shaped bar. The only things that can compete with the surrounding nature are the exquisite delicate aquatic inspired dishes, like poached scallops and acquarello risotto.
Fairmont Banff Springs – 360 Dome
Fairmont Banff Springs is known as Canada’s “Castle in the Rockies,” so any meal consumed here is bound to have a beautiful atmosphere. However, for a truly unforgettable experience there’s nothing like the 360 Dome. Located on the garden terrace, the dome has panoramic views of the resort and the Canadian Rockies. The dome is available for breakfast, brunch, and dinner year-round and while the view is beautiful at any time, we recommend booking during the winter season for a particularly bewitching effect. There is currently only one dome, so you’ll want to make sure to make reservations well in advance. Be sure to note this experience is not for the shy, as other guests are sure to be taking pictures from the balcony during your meal. The food will be worth it, as in the dome you’ll be able to feast on delicacies like Citrus Cured Rougie Duck Confit and Brant Lake Waygu Beef Carpaccio.
